This smoothie is magenta and delicious. Made up of a blend of beets, ginger, meyer lemons, apple, rhubarb and strawberries. It is packed with vitamins and has a tangy yet sweet flavor that fills me with a burst of energy. I used meyer lemons because they are sweeter then the traditional lemons you buy at a grocery store, which nicely pairs with the tart flavor of rhubarb. Rhubarb, part of the celery family, contains vitamin C, fiber & potassium. Ginger, one of my favorite things, is great for digestion. I often put ginger in my smoothies. It is especially good for those of you who do not eat a lot of raw veggies, which can be hard from some people to digest. Ginger is nice treat for your stomach as it adjusts. Enjoy this smoothie and its cleansing properties.
Just Beet It Smoothie.
1 cup fresh strawberries
1/2 medium apple, thinly sliced
1 cup red beet, grated
2 teaspoons ginger, grated
1/4 cup rhubarb, thinly sliced
1/4 cup meyer lemon juice (2 lemons)
